Ingredients Norwegian Sour Cream Pancakes

  • 1 cup dairy sour cream, lowfat ok
  • 1 cup cottage cheese, small curd, lowfat ok
  • 4 eggs, large
  • 3/4 cup flour, shifted
  • 1 tablespoon sugar, or stevia or 3 tablespoons Honey
  • 3/4 teaspoon salt, table

    Instructions for Sour Cream Norwegian Pancakes

    1. Combine sour cream or cottage cheese in mixing bowl.
    2. Add eggs and mix well.
    3. Fold in shifted flour , sugar( or alternatives) and table salt with spatula. Mix for a very short time with mixer .It should be a smooth batter. Set aside.
    4. Heat griddle and grease with butter. Test by seeing if batter bubbles on griddle.
    5. When griddle is very hot. Take about a fifty cent piece sized amount of batter on the griddle for each pancake. Let each pancake bake until golden brown approximately. 2 minutes each side.

    Indulge in the Decadent Christmas Pudding

    Christmas pudding is part of a traditional English pudding. Date pudding is served at Amish Weddings. Date pudding with butter sauce is a unique Christmas desert that will become a beloved family tradition. You can serve it at the end of a Christmas dinner or later in the evening with coffee.
    It is a very rich desert and can be served on it's own. Using butter is essential for the rich flavor and texture of this desert. It is not something you can make a low fat version of. If you are counting calories this holiday season , you will want to count them elsewhere , and enjoy this decadent indulgent desert.
    This desert could also be served late Christmas morning in place of pastry. Again it can be a stand alone item served with juice and coffee. It can also be served at a holiday gathering , it goes wonderfully with hot rum drinks.

    Ingredients for Christmas Date Pudding

    • 6 large eggs, separated
    • 1 1/2 cups sugar
    • 1 stick butter, unsalted
    • 4 tbs flour, heaping
    • 1 tsp baking powder
    • 2 cups dates, chopped
    • 2 cups walnuts, chopped
    • 1/2 tsp salt, kosher

    Instructions for Christmas Date Pudding

    1. Pre-heat oven to 325 degrees
    2. Separate three large eggs. Put side yolks in medium glass bowl. Put aside whites in medium glass bowl.
    3. Fold in sugar while you beat your egg whites. Egg whites should be stiffly beaten.
    4. Beat egg yolks and add to mixture.
    5. Fold in flour,baking powder, and salt.
    6. Mix in chopped dates and nuts with a wooden spoon. Mix well. Pudding will have very coarse texture.
    7. Spread into a greased 2-qt. baking dish. Bake pudding at 325 for 40 minutes or until fork inserted in center comes out clean. Check after 30 minutes.

    • 2 tablespoons flour heaping

    Instructions for Butter Sauce

    1. In a large bowl combine sugar and flour.
    2. Cut in softened butter with fork
    3. Place mixture in sauce pan
    4. Add boiling water to pan.
    5. Whisk in heaping four
    6. Over medium heat stir mixture slowly until thickens.
    7. Generally it will take 5 plus minutes to thicken
    8. Do not boil.
    9. Let set a couple of minutes to thicken more and then pour over pudding while hot.
    10. To make this a carmelized sauce use brown sugar instead of white.

    We are all busy during the holiday, but we all have usually at least one office holiday get together or family gathering that requires us to bring a treat. Health conscious folks always head for raw vegetable tray at get together. This year instead of making the old stand by onion or ranch dip, try this easy hurry curry dip. It goes great with raw veggies and pita chips. There is a low calorie version of this dip included in this recipe.

    • 1 cup mayonnaise or Miracle Whip
    • 1 tsp vinegar, white
    • 1 tsp horseradish
    • 1 tsp onion flakes, dried
    • 1 tsp garlic salt
    • 1 tbsp curry powder

    Holiday Hurry Curry Dip Instructions

    1. Mix mayonnaise or Miracle Whip , Vinegar, horseradish well with a egg beater.
    2. With a wooden spoon mix in onion flakes,garlic salt,and curry powder.
    3. Garnish with paprika.
    4. For healther version use low fat cottage cheese prepared in a blender. Substitute garlic powder for garlic salt.
    5. Note curry flavor is not as strong as amount used seems to suggest.
